AMETIS VILLA BALI TAKES DINERS ON CULINARY ADVENTURE
New Chef and Dining Programme at Home-style Luxury Resort
Ametis Villa Bali announces the appointment of Abdul Halim Hafiz as Executive Chef and launches the culinary “Pay as You Like” and “Street Food at Eternal”concepts.OriginallyfromJakarta,Indonesia, Abdul Halim Hafiz attributes his love affair with food to his childhood years spent helping his mother shop at a traditional market and preparing meals for the family. After his graduation at the Culinary Institute of Krisanti Widya Mandiri, Hafiz started his culinary career as a Commis Chef at Gran Melia Hotel Jakarta under the guidance of Chef Joachim Felber, who was his biggest inspiration. He later moved to Jeddah Hilton Hotel in Saudi Arabia to once again work alongside his mentor and honed his skills at various luxury hotels and resorts, including Moevenpick Hotel Bahrain, Fregate Island Private in Seychelles and Hilton Seychelles Northolme Resort & Spa after. While Hafiz’s career led him to some of the world’s most exotic destinations, it has always been his dream to eventually settle in Bali. After a decade spent in Jakarta, the Middle East and South Africa, he finally made Bali his home in 2012, where he took on more senior positions at The Ritz Carlton Jakarta and Four Seasons Resort in Jimbaran Bay, Bali.
“I love Eternal’s concept of home style dining,” says Hafiz l. “It takes me back to the roots of traditional Indonesian cooking, which essentially focuses on the elements of simplicity, freshness and locally sourced ingredients.” As a native, Hafiz truly understands the laidback vibe of tropical dining, that Eternal advocates. He continues: “Cooking is not just a job to me. I really enjoy cooking and experiencing with food. With Eternal being a home-style dining restaurant, I am sure that I will fit right in. It will feel as if I am preparing culinary treats for my friends and family.”
While delicious menu favourites such as Opor Ayam Bakar (grilled and braised baby chicken in galangal and lemon grass sauce), Sup Buntut (Indonesian clear oxtail soup with celery, potato and carrot) and Udang Galah Papaya Salad, (seared prawn marinated with turmeric and coriander, green Papaya salad) will remain as highlights, the new Chef is planning to combine his culinary experience received over the last 15 years, to enhance these classic dishes with new culinary ideas.
With this, Eternal is taking a creative approach to pleasing palates and introduces the “Pay as You Like” and “Street Food at Eternal” initiatives.
Available on Monday, Wednesday and Saturday and serving ten plates per day only, diners can opt for the “Pay as You Like” dining concept and be surprised at the discretion of Chef Hafiz. Using seasonal and local ingredients, the Chef’s a la minute Indonesian creation is priced at what guests they think their dish is worth. The initiative aims to make dining an interactive experience, where guests will be taken on a flavorsome adventure, while the culinary team can work in the feedback received from its guests.
On Thursday nights, live cooking stations will be added to the dining experience. Located in front of the restaurant, at Jalan Pantai Batu Bolong, which is gradually becoming the island’s coolest street, the stalls will display a variety of ingredients, including the catch of the day from a nearby fishing village, various meats, garden fresh vegetables, noodles and homegrown herbs and spices. Starting from IDR 45,000
per dish or IDR 180,000 for an ‘all you can eat’ dinner, patrons can choose their preferred ingredients and cooking technique, either a tasty Mongolian Grill or a healthy Steamboat with different flavored soups.
